objectives:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>to aerate the ground and prevent calcification<\/li>\n\n\n\n<li>to avoid the use of chemicals by weeding between rows and between vines<\/li>\n<\/ul>\n\n\n\n<p><strong>Additionally the aeration of the ground:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>encourages humidity to rise up<\/li>\n\n\n\n<li>improves the drainage of each plot<\/li>\n\n\n\n<li>allows the roots to grow deeper<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group sld\"><div strengthens the quality of the wine. A healthy vine has roots which grow down more than a metre a year. Growing down they go through various layers of soil and thus add to the characteristics of the grape and the wine.<\/p>\n\n\n\n<p>It is what we call the \u201cmin\u00e9ralit\u00e9\u201d of the wine. In winter, we plant cereal to break the ground, feed it with humus, and we plant \u201cvesce\u201d to put nitrogen back into the soil. In spring, we plant grasses which stimulate the roots of vines and force them to find their subsistence in depth.<\/p>\n\n\n\n<p>In conclusion, the planting of cover crops:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Provides nitrogen<\/strong>&nbsp;to the soil,<\/li>\n\n\n\n<li><strong>Enriches it with organic substances<\/strong>,<\/li>\n\n\n\n<li><strong>aerates and loosens the soil<\/strong>&nbsp;to encourage deep rooting.<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group sld\"><div class=\"wp-block-group__inner-container wp-block-group-is-layout-constrained\">\n<h1 class=\"wp-block-heading text-heading text-huge\">Working Our Soil<\/h1>\n\n\n\n<p>Micro biological analyses made by a specialised laboratory have shown, after a detailed study of the soil in the various plots of land, which selected cereals and grasses should be planted during winter.<\/p>\n\n\n\n<p>Soil samples are taken as deep as 4 to 5 metres.<\/p>\n\n\n\n<p>There are two ways of working the soil:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Between rows, soil is tilled with a plough which churns the ground and with an \u201cActi-sol\u201d<\/li>\n\n\n\n<li>Between vine trunks, the soil is worked by using a vineyard plough which is provided with a sensor which directs the hydraulic arm to avoid contact with the trunks so as not to damage them.<\/li>\n<\/ul>\n\n\n\n<p>This aeration of the ground allows the roots to grow down in depth, rather than colonising laterally.<\/p>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group sld\"><div class=\"wp-block-group__inner-container is-layout-constrained so as to provide balance by natural means and remove the need to use systemic chemicals.<\/p>\n\n\n\n<p>The only products that we use are natural and limited to:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The Bordeaux mixture is a solution of copper sulphite, slaked lime and water to which we add pine resin : It protects vines against the mildew (fungus) and strengthens the skins.<\/li>\n\n\n\n<li>Sulphur which protects vines against odium (fungus) and acaroids.<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/div>\n<\/div><\/section>\n\n\n\n<section class=\"wp-block-group pd-v-lg slider-wrap\"><div wp-block-group-is-layout-constrained\">\n<h1 class=\"wp-block-heading text-heading text-huge\">Vine Works<\/h1>\n\n\n\n<p>The trellising encourages an increase of the canopy (the quantity of leaf) and its exposure to the sun. The vine leaves are instrumental during the photosynthesis process, , using the energy of sunlight, molecules of water and carbon dioxide to produce sugar and oxygen. Due to their differences of concentration, the fluids circulate in the plant and finally reach the grape.<\/p>\n\n\n\n<p>The thicker the canopy, the more the sugar content increases improving the ripening of the grapes. The maturity of the grape depends on the quality of photosynthesis and leaf area. Good pruning is fundamental to the productivity of every vine and the quality of the grape. The revival of the vineyard Domaine des Rabelles entailed the redesign and the replanting of vineyards to adapt them to the newly organised qualitative strategy.<\/p>\n\n\n\n<p>The pruning pursues&nbsp;<strong>two objectives<\/strong>:<\/p>\n\n\n\n<p><strong>The Aeration of the plants<\/strong>:<br>Vines are pruned so as to leave one V shape at the centre of the trunk. The V pruning allows aeration of the plant and thus avoids the concentration of fungus or bacteria.<\/p>\n\n\n\n<p><strong>The limitation of production<\/strong>: We limit the yield by pruning short, which is by leaving 4 carriers per foot. Vine shoots are cut back to 1 or 2 buds to obtain 4 to 6 grape clusters maximum per foot. It is the moment when the grape closes on its stalk and begins its growth. This technique consists of selecting the best clusters from every foot, to preserve the reduced number. At Domaine des Rabelles, we normally keep only 4 to 6 clusters per foot.<\/p>\n\n\n\n<p>This means all the energy of the vine concentrates on a smaller number of grape clusters. This gives high-quality grapes and concentrates the maturing grape ripening. The \u201c\u00e9claircissage\u201d \u2013 or green grape harvest \u2013 begins in June and finishes at the end of July. This work is completely performed by hand.<\/p>\n\n\n\n<p><strong>The Thinning-Out Of Leaves<\/strong>&nbsp;occurs during the same period. The vines are plucked of some leaves on the Eastern side (rising sun) to dry the morning dew.<\/p>\n\n\n\n<p>In September, the thinning-out of leaves allows the stronger sun beams at sunset to colour vinification:<\/p>\n\n\n\n<p><strong>Pigeage<\/strong>: A French traditional winemaking term. Once fermentation begins, the grape skins are pushed to the surface by carbon dioxide gases released in the fermentation process. This layer of skins and other solids is known as the cap. As the skins are the source of the tannins, the cap needs to be punched, which traditionally is done by stomping through the vat.<\/p>\n\n\n\n<p><strong>Pumping over<\/strong>&nbsp;(remontage): we pump the juice through the cap<\/p>\n\n\n\n<p><strong>Rack-and-return cycle<\/strong>&nbsp;(d\u00e9lestage): the juice is transferred to a new container. The contact with the oxygen boosts the work of yeasts. It feeds the wine, makes it more ample and rounds off tannins. The domain is thus responsible for all the process, from the breeding of grapes to the bottling. The authenticity and the quality are guaranteed at every stage<\/p>\n\n\n\n<p>Red wines are bottled after be aged during 18 months in oaken barrels.<\/p>\n<\/div><\/div>\n<\/div><figure
